Marinated wild salmon with baby new potatoes Ingredients 1 wild salmon fillet 1 teaspoon tamari 1 tablespoon balsamic vinegar 5g coconut oil shiitake mushrooms boiled baby new potatoes Method Mix the tamari, vinegar and black pepper in a shallow bowl. Put the salmon in skin up. Boil the new potatoes and prepare the shiitake mushrooms. Heat the coconut oil in a frying pan, place the salmon face down (skin up) for about 4-5 mins – not too high heat or it will burn. Add some more of the marinade and it will start to reduce and make a lovely sticky sauce – I added my potatoes into the pan to coat them with the marinade too. You can turn the salmon over if you like to eat the skin and want it cooked, I don’t so I didn’t, I left it to rest for a couple of minutes while I cooked the mushrooms in the sauce.
