Guyanese Bakes, or simply Floats throughout the Caribbean Islands. These breads are sliced and stuffed with salt fish and eaten as a breakfast sandwich. In my humble opinion, Bake is that kind of bread which can be eaten with almost anything. Puffy and light, what’s there not to love? Slice it up, stuff with egg or fish, spread some fruit preserve, mop it up with some balah fayah chicken curry, or simply eat it by itself, they are an ideal blank canvas as an accompaniment yet stand strong and delicious, alone. this week we got it with two side dishes, Salt fish fried up with all essential spices to perfection and Baigan chokah with that amazing garlicy taste,
Baigan choka was one of my favorite dishes while growing up.The spicy, “roasted garlic” taste of the baigan choka cannot be put into words; you just have to try it.Even though I know this dish as baigan choka from our East Indian culture , I read that it’s called “baba ganush” in middle eastern countries; the preparation is a little different but one thing remains the same, the baigan (eggplant).
